Peanut Butter Confetti Squares

My daughter was out at a play date yesterday afternoon so I stopped by the grocery store to pick up some holiday baking supplies. I didn’t really go in with a list or any specific recipes in mind. There are just certain ingredients that you just know you need on hand this time of year – like brown sugar, chocolate chips and marshmallows. When I went to grab a bag of mini marshmallows, sort of thinking about fudge, I spotted the colourful fruity marshmallows and knew I had to have them and exactly what I was going to do with them. As I went though the checkout a young man was helping to bag my groceries. He was working away and then a smile crossed his face and he asked “Oh are you making the peanut butter, marshmallow cake?” Indeed I was. This is such a stand by holiday treat that I bet it would be hard to find someone who isn’t familiar with it.

  • 4 cups of mini coloured marshmallows
  • ½ cup of butter or margarine
  • 1 cup of peanut butter
  • 1 package (300g) of butterscotch chips
  1. Spray an 8x8 pan with cooking spray or (my preference) line with foil and then spray the foil.
  2. Measure out the marshmallows and set aside.
  3. In a large pot, over medium heat, melt the butter.
  4. Add the peanut butter and butterscotch chips and cook, stirring often, until melted and smooth.
  5. Remove from heat and allow to cool just slightly ( so your marshmallows don't melt) for a couple of minutes.
  6. Stir in the marshmallows and mix well, covering all of the marshmallows in the peanut butter mix.
  7. Pour into the prepared pan and refrigerate until set and firm.
  8. Cut into squares.

  1. I love to make these , my hubbys fav , I do them with wow butter though and they still turn out amazing
