Apple Oatmeal Muffins

Ok I admit it – I have a thing for oatmeal muffins. Maybe it’s because I’m on the go a lot and they are a quick, reasonable healthy snack to grab. Or maybe it’s just because they are so moist and delicious. But I adore them. These apple oatmeal muffins are my current favorite. Moist and chewy with juicy little bits of apple in them.

Apple Oatmeal Muffins (makes 12 muffins)
Recipe type: Muffins
  • 1 cup of quick oats
  • ¾ cup of brown sugar
  • 1 tsp of baking soda
  • 1 tsp of baking powder
  • ½ tsp of salt
  • 1 cup of flour
  • ½ cup of ground flax seed (optional)
  • 1 tsp of cinnamon
  • ¾ cup of milk
  • ¼ cup of oil
  • 1 egg
  • ½ cup of apple sauce
  • 1 tsp vanilla
  • 1 apple peeled and cut into small chunks
  1. Preheat oven to 350.
  2. Mix all of they dry ingredients (the first 8 ingredients) together in a medium size bowl.
  3. In a larger bowl mix together the rest of the ingredients.
  4. Pour the dry ingredients into the wet ones and mix until just combined. Do not over mix.
  5. Pour into a prepared muffin pan.
  6. Cook for 15-20 minutes or until a toothpick comes out clean.
  7. Cool on a wire rack.
