I’ve seen a lot of posts lately with recipes for pizza crust made of cauliflower. Everyone says it’s wonderful. And maybe it is. But I just can’t get over the fact that it’s cauliflower – one of my least favourite vegetables. I don’t care how you sell it I just won’t eat it. So I thought there must be an alternative for people like my husband and I who eat a lower carb (not no carb!) diet. And then I spotted the spaghetti squash sitting on the counter and knew that was the answer. We are huge spaghetti squash fans and this just seemed like the perfect fit. I made a “cheeseburger” pizza but you can get creative and use your favorite toppings.
Cheeseburger Spaghetti Squash Pizza
- 1 spaghetti squash, cooked (cut in half, remove seeds and cook in a 400 degree oven for about 30 minutes or microwave for about 7 minutes)
- 1 egg, lightly beaten
- 1/2 cup of fresh grated parmesan cheese
- 1 small can (about 3/4 cup) of pizza sauce
- 1/2 pound of cooked lean ground beef
- 1/2 sweet onion cut into thin slices
- 2 cups of your favorite pizza cheese, grated (I used half cheddar and half mozzarella)
- 1/2 of a fresh tomato sliced thinly
- 1/2 bell pepper cut into small pieces
Preheat oven to 425 degrees.
Scrape out the contents of your cooked squash into a medium sized bowl.
Gently squeeze some of the excess moisture out into another bowl or into the sink. You don’t have to get it bone dry, just a light squeeze will do.
Add the egg and parmesan cheese and mix well.
Either line a cookie sheet with parchment paper or generously oil two medium size cast iron pans.
Spread the squash mixture onto the cookie sheet or between the two pans. You want to get it about “pizza crust” thin and think more along the lines of a thin crust pizza. You can make it a little thicker if you like as long as you are prepared to eat it with a fork instead of picking it up like pizza.
Place in the preheated oven and cook for 15-20 minutes or until the crust firms up and just starts to brown a little on top.
Remove from oven and cover with pizza sauce.
Top with the cooked ground beef and the onion slices.
Now add the grated cheese, sweet peppers and tomatoes.
Place in the oven and cook for another 15 minutes or until the cheese is bubbly and turning a nice golden brown.
Remove from the oven and allow to cool for a few minutes before serving.
