Pumpkin Spice Loaf

Smother this moist, sightly spicy loaf in rich creamy cream cheese icing for the ultimate in pumpkin heaven!

  • 2 cups of flour
  • 1 teaspoon baking soda
  • 1 teaspoon of pumpkin spice
  • ½ teaspoon of vanilla
  • 1 cup of pureed pumpkin (not pumpkin pie filler)
  • ½ cup of canola oil
  • 2 eggs
  • 1 ½ cups granulated sugar
  • 1 package of cream cheese softened
  • ¼ cup of butter or margarine softened
  • ½ teaspoon of vanilla
  • 4 cups of icing sugar
  1. Grease or spray a loaf pan.
  2. Preheat your oven to 325 degrees.
  3. Put the pumpkin, eggs, oil and sugar in a large mixing bowl and beat until combined.
  4. Beat in the baking soda, pumpkin spice and vanilla.
  5. Add the flour and mix until just combined.
  6. Scoop into the loaf pan and cook for about 50 minutes or until a toothpick comes out clean.
  7. Cool the loaf in the pan for about 10 minutes and then remove to completely cook on a wire rack.
  8. While the loaf is cooling make your cream cheese icing.
  9. Beat the cream cheese and butter together until light and fluffy.
  10. Add the vanilla and beat again.
  11. Add the icing sugar one cup at a time, beating between each cup.
  12. Ice your cooled loaf and sprinkle with chopped pecans if desired.
