Turkey Peach & Pomegranate Quinoa Salad

This salad is a complete meal packed full of protein, fibre, healthy carbs and nutrients
Ingredients
Salad
  • 2 lbs of turkey breast
  • 1 tbsp of olive oil
  • salt & pepper to taste
  • 1 pomegranate
  • ¾ cup of sunflower seeds
  • 2 unripe peaches
  • 3 medium sized carrots
  • ½ fennel bulb
  • 2 cups of red quinoa
Dressing
  • ⅓ bunch of mint
  • ⅓ bunch of basil
  • ⅓ bunch of cilantro
  • 1 tbsp of honey
  • 2 tbsp of apple cider
  • 3 tbsp of olive oil
  • salt & pepper
Instructions
  1. Cook quinoa according to package instructions. Let cool.
  2. Slice turkey breast into 1 inch slices
  3. Brush with olive oil and season with salt and pepper.
  4. Grill on medium heat until cooked through, 6-8 minutes per side.
  5. Remove from heat and let cool.
  6. Roughly chop the turkey.
  7. Remove seeds from pomegranate.
  8. Slice peaches.
  9. Dice fennel.
  10. Clean carrots and shave into long strips.
  11. Mix all the ingredients together.
  12. To make the dressing combine all of the ingredients and blend. Season with salt and pepper and dress the salad
