Banana Oatmeal Muffin Recipe
  • 1½ cups of flour
  • 1 tsp of baking soda
  • ½ tsp of baking powder
  • 1 cup of quick oats
  • ⅓ cup of brown sugar
  • ½ cup of white sugar
  • ¼ cup of ground flax seed
  • 3 over ripe bananas
  • 1 egg
  • ¾ cup of unsweetened Almond Breeze Almond Milk shelf stable or refrigerated
  • ⅓ cup of oil
  • ¾ cup of chocolate chips (optional)
  1. Preheat oven to 400 degrees
  2. Line muffin tins with muffin papers
  3. Combine dry ingredients in a large bowl.
  4. In a separate bowl mush the bananas and add the egg, milk and oil. Stir together.
  5. Add the wet ingredients to the dry ingredients and mix until well combined (do not over mix). Stir in the chocolate chips (optional).
  6. Scoop the muffin mix into the muffin tins. Bake for about 15 minutes or until a toothpick inserted into the middle comes out clean.
  7. Cool on a wire rack.
