It’s mid March now and I think, I hope, the worst of winter is finally behind us. That was a long, cold one. In fact where I live we had the coldest February in 80 years. I am so ready for spring! I’m ready to put away the parka and the big winter boots. I’m ready to think about planting my garden and having meals on the patio. I’m even ready to get busy spring cleaning. Spring almost feels like the beginning of the year for me. And that also makes it a great time to focus on my health.  Now that the -40 temperatures are over I can enjoy getting outside more and I find that when I put more focus on getting out and getting active I tend to pay more attention to how I’m eating.

Although I do try to eat pretty healthy all the time, and to feed my daughter healthy meals, with all of the demands on our time it can be a challenge. It’s amazing how jam packed an eight year old’s calendar can get! Between school, dance, music, homework, and social activities it feels like I’m always on the go with her. I do my best to plan ahead and do some meal prep but I admit I’m not great at that. However, I am pretty good at keeping the fridge, freezer and pantry stocked with healthy options. So, even if I don’t have all my meals planned I know I have the ingredients on hand to whip up something nutritious. Pantry staples like beans, canned tomatoes, lentils, brown rice and lots of herbs and spices are a must to have on hand. You’ll always find fruits and vegetables like apples, sweet peppers (my favorite), onions, sweet potatoes and carrots in my fridge. Those are some staple produce items that can be used in so many recipes.  And another versatile, healthy ingredients that I always make sure I have is turkey. Whether it’s ground turkey, turkey breasts or leftover roast turkey from the holidays, you will always find some in my fridge or freezer.

Tex-Mex Tasty Turkey Meatloaf
TIP: Serve this meatloaf with a selection of healthy sides so your family can enjoy their favourites and create a well-rounded meal. Try salsa, avocado slices, shredded lettuce, tomatoes, and guacamole or shredded cheese.
  • 2 lbs. lean ground turkey
  • 2 cups diced onions
  • 1 cup Panko breadcrumbs
  • 3 eggs
  • ¾ cup salsa
  • ¾ cup sour cream
  • 2 tbsp HP sauce
  • 2 tbsp Chili powder
  • 1 small can (398 ml) black beans, drained
  • 1 small can (398 ml) corn, drained
  • Salt and pepper to taste
  1. In a non-stick skillet, sauté onions until softened and slightly cooked, 2-4 minutes. Set aside to cool.
  2. Pre-heat your oven to 350°F (175°C).
  3. Combine remaining ingredients in a large mixing bowl. Gently mix together until ingredients are combined. Do not over mix.
  4. Bake in a standard size loaf pan for 45 minutes or until an instant thermometer registers a temperature of 165 °F (74°C).
  5. Let cool slightly before slicing and serving.
