It’s mid March now and I think, I hope, the worst of winter is finally behind us. That was a long, cold one. In fact where I live we had the coldest February in 80 years. I am so ready for spring! I’m ready to put away the parka and the big winter boots. I’m ready to think about planting my garden and having meals on the patio. I’m even ready to get busy spring cleaning. I do my best to plan ahead and do some meal prep but I admit I’m not great at that. However, I am pretty good at keeping the fridge, freezer and pantry stocked with healthy options. So, even if I don’t have all my meals planned I know I have the ingredients on hand to whip up something nutritious. Pantry staples like beans, canned tomatoes, lentils, brown rice and lots of herbs and spices are a must to have on hand. You’ll always find fruits and vegetables like apples, sweet peppers (my favorite), onions, sweet potatoes and carrots in my fridge. Whether it’s ground turkey, turkey breasts or leftover roast turkey from the holidays, you will always find some in my fridge or freezer.

Tex-Mex Tasty Turkey Meatloaf

Author Canadian Turkey


  • 2 lbs lean ground turkey
  • 2 cups diced onions
  • 1 cup Panko breadcrumbs
  • 3 eggs
  • 3/4 cup salsa
  • 3/4 cup sour cream
  • 2 tbsp HP sauce
  • 2 tbsp chili powder
  • 1 small can (398 ml) black beans, drained
  • 1 small can (s98 ml) corn, drained
  • Salt and pepper to taste


  1. In a non-stick skillet, saute onions until softened and slightly cooked, 2-4 minutes. Set aside to cool.

  2. Preheat your oven to 350 F (175 C)

  3. Combine remaining ingredients in a large mixing bowl. Gently mix together until ingredients are combines. Do not over mix.

  4. Bake in a standard size loaf pan for 45 minutes or until an instant thermometer registers a temperature of 165 F (74 C).

  5. Let cool slightly before slicing and serving

Tip:  serve this meatloaf with a selection of healthy sides so your family can enjoy their favourites and create a well-rounded meal. Try salsa, avocado slices, shredded lettuce, tomatoes, and guacamole or shredded cheese.
