Pears are, in my opinion, one of the most underrated fall fruits. Sweet and juicy, they are great one their own, paired (see what I did there) with some good cheese or you can use them to elevate your baking. I find pears to be more flavourful than apples when it comes to baking so they an easily take centre stage without much fuss. This easy to make loaf is really just a simple cinnamon loaf topped with pears and brown sugar to give the pears a lovely caramelized look and taste. As the pears cook a few pieces make their way down into the loaf so you get some nice bites of pear not just on top but inside as well.
- 2 cups of flour
- 1 cup of white sugar
- 1 teaspoon of baking soda
- ¼ tsp of salt
- 1 cup of milk
- 1 egg
- ½ teaspoon of vanilla extract
- ¼ cup of vegetable oil (I use canola)
- 1 just ripe pear sliced (I prefer Bartlett for this recipe)
- ⅓ cup of brown sugar
- 1 tablespoon of cinnamon
- Preheat oven to 350.
- Grease and line a loaf pan with parchment paper.
- In a large bowl mix together the flour, white sugar, baking soda and salt.
- Add the milk, egg, vanilla and oil.
- Mix just until all of the ingredients are well combined.
- In a small dish mix together the brown sugar and cinnamon.
- Spread half the batter into the loaf pan.
- Sprinkle half of the sugar cinnamon mixture over the batter.
- Top with the remaining batter.
- Using a bread knife to gently make figure 8s through the batter to swirl the cinnamon sugar mixture.
- Layer the pear slices on top of the loaf (see picture in post above).
- Sprinkle with the remaining sugar cinnamon mix.
- Bake for 45-55 minutes, until a toothpick comes out clean.

I love it when you’re baking in the kitchen and sharing it with us! I can’t wait to have a bite someday.
Besos Sarah.
This sounds so very good, and something totally different, going to have to give it a try!
