Five Healthy(ish) Muffin Recipes for Back to School

It’s back to school time! I don’t mind back to school. Back to routines, Beautiful fall weather. I get to pull my boots out of the closet (yes I’m all about those boots, the taller the better). But my least favorite thing about back to school is making school lunches five days a week. We usually start out pretty strong but a couple of months into it the lunches start to get a little boring. And it’s not from lack of effort on my part. I’m always coming up with new idea (or other people’s ideas) but getting the kid excited about them is another story. But we do have our tried and true recipes that I know I can’t miss with. Like muffins. Muffins are always a hit. And I’m not talking about the bran raisin muffins my mother use to put in my lunch. Honestly, it’s like the ONLY muffin recipe she used. Bran might have some health benefits but man those muffins were not appetizing. But I have a handful of reasonably healthy, and tasty, muffin recipes that always go over well. They are great as part of lunch or also as a quick and easy after school snack. So it’s probably time to get baking and stock the freezer!

Apple Oatmeal Muffins

These apple oatmeal muffins are moist and chewy with little juicy bits of apple in them. They are also packed full of fibre rich oatmeal and flax seed.

Zucchini Chocolate Muffins

There’s a good chance that you have some zucchini laying around right now just waiting to be used. And if you don’t you probably know someone that does and would love to get rid of some! These chocolate zucchini muffins are so moist and delicious everyone will love them.

Banana Oatmeal Muffins

You just cannot beat a classic banana muffin. Add a little oatmeal for taste, texture and fibre and these banana oatmeal muffins might just become your new favorite.

Pumpkin Oatmeal Muffins

Fall isn’t just back to school season, but also pumpkin season! In fact I heard that Starbucks started serving pumpkin spice lattes today. Pumpkin is awesome in muffins. It’s full of fibre, keeps the muffins moist and just tastes yummy.

Chocolate Chip Muffins

Ok so although these aren’t “bad” for you, these basic chocolate chips muffins are probably the least “healthy” of the muffins in this post. But that’s ok. Sometimes you just want yum. And these my muffins, with subtle flavours of vanilla and cinnamon, are just plain good. And if you don’t want to use chocolate chips this is the perfect recipe to add blueberries, cranberries, or raspberries to!
