I know that when some people think “salad” they think diet. Once upon a time the word salad conjured images of iceberg lettuce and shredded carrots. But salads have definitely evolved. They can make a healthy and delicious starter or side dish. And the right salad can be your entire meal. This turkey, peach and pomegranate quinoa salad fits that bill perfectly. It has everything you need. It’s loaded with healthy protein thanks to the turkey breast, quinoa and sunflower seeds. The quinoa also give you a good dose of healthy carbs and fibre while the turkey provides plenty of nutrients your body needs like zinc, iron and B vitamins. Of course the peaches (which happen to be in season right now), pomegranate and carrots also add a lot to both the nutrient and flavour profile of this dish. And let’s talk about the dressing, because it doesn’t matter what’s in your salad, the dressing will make or break it. This one is full of fresh mint, basil and cilantro, which a lot of you might be able to go out to your herb garden and pick right now. This vinaigrette is light and fresh and the perfect finishing touch to this awesome salad.
- 2 lbs of turkey breast
- 1 tbsp of olive oil
- salt & pepper to taste
- 1 pomegranate
- ¾ cup of sunflower seeds
- 2 unripe peaches
- 3 medium sized carrots
- ½ fennel bulb
- 2 cups of red quinoa
- ⅓ bunch of mint
- ⅓ bunch of basil
- ⅓ bunch of cilantro
- 1 tbsp of honey
- 2 tbsp of apple cider
- 3 tbsp of olive oil
- salt & pepper
- Cook quinoa according to package instructions. Let cool.
- Slice turkey breast into 1 inch slices
- Brush with olive oil and season with salt and pepper.
- Grill on medium heat until cooked through, 6-8 minutes per side.
- Remove from heat and let cool.
- Roughly chop the turkey.
- Remove seeds from pomegranate.
- Slice peaches.
- Dice fennel.
- Clean carrots and shave into long strips.
- Mix all the ingredients together.
- To make the dressing combine all of the ingredients and blend. Season with salt and pepper and dress the salad

We all know (I hope) that turkey is a excellent source of lean protein. But you may not know that it it also a great source of vitamins and essential nutrients to help keep you fuelled and healthy all summer long. And the other thing I love about turkey is the versatility of cooking with it. Because you can purchase your turkey in so many different cuts your options are endless. If you haven’t tried it yet I really urge you to think outside the box a bit and try substituting turkey in some of your favourite recipes. It makes a wicked chilli, awesome burgers and “butter turkey” is pretty darn yummy too! Turkey is the perfect summer protein since it grills so well and it’s a great addition to your favourite salads (try throwing some in your pasta salad too).
