I’m right in the thick of my holiday baking and decided to take a look in my pantry to see what stray ingredients I had that I could use up. I found a half of a box of graham crumbs and thought why couldn’t I use those in a cookie recipe? Turns out I could. And they were amazing. I used a basic chocolate chip recipe and just substituted part of the flour for the graham crumbs. Instead of chocolate chips (which you could certainly use) I used a few white chocolate and butterscotch chips because I think they just go perfectly with the graham flavour. These cookies bake up thin and chewy.

Ingredients
  • ½ cup of butter or margarine
  • ¾ cup of white sugar
  • ½ tsp of vanilla
  • 1 egg
  • 1 tsp of baking soda
  • ¼ tsp of salt
  • 1 cup of flour
  • ¾ cup of graham crumbs
  • ¾ cup of white and/or butterscotch chips
Instructions
  1. Preheat oven to 350.
  2. Cream the butter and sugar together.
  3. Mix in the vanilla and egg.
  4. Mix in the baking soda and salt
  5. Mix in the flour and graham crumbs.
  6. Stir in the chips.
  7. Drop by the spoonful onto a greased or lined cookie sheet.
  8. Bake for approximately 8 minutes, until the cookies are golden brown around the edges.
  9. Cool on a wire rack.
