Healthy Zucchini Chocolate Muffin Recipe

Molly started school a couple of weeks ago and since kindergarten here is only half days I don’t need to pack a lunch for her but I do need to send a morning snack. The policy at her school is that the snack has to be healthy and litter free. Last week we made some yummy homemade banana oatmeal muffins  that she loved. With zucchini being in season and reasonably affordable (even free if you have a friend with a green thumb) I suggested we make some zucchini muffins. I got a funny look that told me she thought that was a horrible idea. But then a classmate showed up with a chocolate zucchini muffin for snack time and she, of course, changed her tone about zucchini muffins. So we worked on a recipe that would satisfy the healthy rule and would be tasty enough that a five year old will eat it. We were both pleased with the outcome.

Healthy Zucchini Chocolate Muffins
Recipe type: Muffins
  • 1½ cups of flour
  • ½ cup of quick oats
  • ¼ cup of ground flax seed
  • 2 tsp of baking soda
  • 1½ cups of cocoa powder
  • 2 eggs
  • ½ cup of unsweetened apple sauce
  • 1½ cups of white sugar (or Splenda)
  • ½ cup of canola oil
  • ½ cup of greek yogurt or sour cream
  • ½ tsp of cinnamon
  • 1 tsp of vanilla
  • 2 cups of grated zucchini with the excess moisture squeezed out
  • ¾ cup of chocolate chips
  1. Preheat oven to 350.
  2. Line muffin tins with papers or spray with cooking spray (this recipe makes 18-24 muffins)
  3. Mix the first five dry ingredients together in a medium sized bowl.
  4. Set aside.
  5. In a larger bowl whisk together the eggs, apple sauce, sugar and oil.
  6. Add the yogurt, cinnamon and vanilla and mix well.
  7. Stir in the zucchini.
  8. Stir in the dry ingredients and mix until just mixed.
  9. Gently stir in the chocolate chips.
  10. Bake for 15-20 minutes or until a toothpick inserted in the middle comes out clean.
  11. Cool on a wire rack.

  1. I love zucchinis and I love muffins so this is the perfect marriage. I've had muffins with sour cream in it before and really liked the extra kick.
