One of my daughter’s favorite meals is sweet and sour meatballs and rice. I’m kind of a fan myself. This twist on an old standby is much healthier and so delicious. She gobbled them up. And so did I.
Apple Glazed Chicken, Apple & Spinach Meatballs Recipe

Ingredients
Meatballs
- 1 pound of ground chicken
- 1 apple, finely grated with some of the moisture squeezed out
- 2 tablespoons of chopped spinach - if using frozen spinach squeeze the moisture out
- ½ teaspoon of chopped garlic
- 1 tablespoon of ground flax seed
- ½ cup of quick oats
- 1 tablespoon of grated Parmesan
- Dash of salt and pepper
Sauce
- 1 cup of apple juice
- 1 tablespoon of corn starch
- 1 tablespoon of soya sauce
- 2 tablespoons of vinegar
- 2 tablespoons of brown sugar
Instructions
- Mix all of the meatballs ingredients together in a bowl until well combined.
- Cook in a large pan over medium heat. If your ground chicken is quite lean, which is usually is, you might want to add just a touch of oil to the pan to prevent sticking.
- Cook until the meatballs are cooked all the way through, turning them often.
- Remove from the pan.
- Add the apple juice and the corn starch to the pan over low heat.
- Stir well until the corn starch is dissolved and not lumpy.
- Add the soya sauce, vinegar and brown sugar.
- Continue to cook over low heat until the sauce thickens.
- Put the meatballs back in the pan and let cook in the sauce for a few minutes.
- Remove from heat and serve.
