Pumpkin Spice Loaf

Ingredients
Pumpkin Loaf
- 2 cups of flour
- 1 teaspoon baking soda
- 1 teaspoon of pumpkin spice
- ½ teaspoon of vanilla
- 1 cup of pureed pumpkin (not pumpkin pie filler)
- ½ cup of canola oil
- 2 eggs
- 1 ½ cups granulated sugar
Icing
- 1 package of cream cheese softened
- ¼ cup of butter or margarine softened
- ½ teaspoon of vanilla
- 4 cups of icing sugar
Instructions
- Grease or spray a loaf pan.
- Preheat your oven to 325 degrees.
- Put the pumpkin, eggs, oil and sugar in a large mixing bowl and beat until combined.
- Beat in the baking soda, pumpkin spice and vanilla.
- Add the flour and mix until just combined.
- Scoop into the loaf pan and cook for about 50 minutes or until a toothpick comes out clean.
- Cool the loaf in the pan for about 10 minutes and then remove to completely cook on a wire rack.
- While the loaf is cooling make your cream cheese icing.
- Beat the cream cheese and butter together until light and fluffy.
- Add the vanilla and beat again.
- Add the icing sugar one cup at a time, beating between each cup.
- Ice your cooled loaf and sprinkle with chopped pecans if desired.
