Gluten Free Lemon Loaf Recipe (with GF cake mix)

Another big thanks to my oh so clever friend Jessica for this awesome recipe!

This is a quick and easy way to take a plain flavoured gluten free cake mix and punch it up a bit.  Lemon is a great choice but experiment with other pudding mixes too.  Read that packages but my understanding is that most (maybe all) Jello pudding mixes are gluten free.

Gluten Free Lemon Loaf

Ingredients:

  • 1 package of Betty Crocker Gluten Free Yellow cake mix
  • 1 box of Jello instant lemon pudding mix
  • 1/2 cup of vegetable oil
  • 2/3 cup of water
  • 4 eggs
  • 2 teaspoons of vanilla
  • 1 cup if icing sugar
  • Lemon juice

Directions:

Preheat oven to 350.

Grease and flour a loaf pan (or spray well with cooking spray).

Mix all ingredients until well incorporated.

Pour the batter into your greased pan.  Bake according to the directions on the cake mix box.

Remove from oven, allow to cool for 10 minutes then remove the cake from pan and cool on a wire rack.

While still warm mix the icing sugar with just enough lemon juice to make a thick glaze.  Pour over cake.  Allow to cool completely before serving.

  4. Sorry, but I’m a little confused.

    Are the last 2 ingredients for the icing?

    1 cup of icing sugar?

    • Hi Betty, yes I’m sorry I realize looking at it that it’s not totally clear but the last two ingredients are for the icing.

  5. Could you please tell me what size loaf pan? I have a 5”x10” loaf pan. Is this too large?
