Cheesy Mexicana Hashbrown Casserole #MemorableMelts

Life is busy.  So, so busy! But no matter how busy it gets, one priority in our home is to have dinner together (just about) every night.  It can be a challenge some days.  There’s a lot to do and there are days that by the time I get home from work the last thing I really want to do is cook.  But that  time together is important, and I have a growing almost four year old.   So I just make it happen.

Cooking from scratch is important.  I like having the control over what goods into our food and, well, homemade always tastes better.  When I come across products that allow me to serve meals I love but add convenience, well, that is win win!

Yesterday I picked up a package of the Kraft Creamy Mexicana  Shredded Cheese with a Touch of Philadelphia and decided to slightly revamp an old family favorite. I’ve been making this Cheesy Hashbrown Casserole for years but I decided to change it up just a bit.  First, replacing regular cheddar cheese with the Creamy Mexicana to make it extra creamy and adding a few extra ingredients to carry through the Mexican theme (and to indulge my little one’s new fondness for peppers).  The results were awesome!

The Kraft Creamy Mexicana  Shredded Cheese with a Touch of Philadelphia took this already delicious dish to a new level.  This dish is so easy to make and is a creamy, melt in your mouth experience that the whole family loves. It is a great dinner dish but also is a favorite addition to brunch! Plus the cheese is so eas and quick to cook with!

 Cheesy Mexicana Hashbrown Casserole

Print Recipe

Ingredients:

  • 1 package of  diced hashbrowns
  • 1/4 cup of butter or margarine melted
  • 1 can of cream of chicken soup
  • 3/4 cup of sour cream
  • 1/3 cup of onion diced
  • 1/2 sweet bell pepper diced
  • 1 can of kernel corn drained
  • 1 package of Kraft Creamy Mexicana Shredded Cheese with a Touch of Philadelphia
  • salt and pepper to taste

Directions:

Preheat oven to 350.

Spray a large casserole dish with cooking spray (or grease with butter/margarine)

Put the entire package of hashbrowns into a large bowl.  Mix in the melted butter. Add the soup, sour cream, onion, corn and pepper.  Mix well.  Add salt and pepper to taste and 2 cups of the shredded cheese.  Gently mix.

Scoop the mixture into the casserole dish.  Sprinkle 1 cup of the shredded cheese on top.  Bake for about 35 minutes or until the top is golden and the hashbrowns are tender.

  1. Nice! I like the twist on a good recipe. A can of green chilis would also be good in there, give it a bit of a kick. Or maybe serve it with some salsa. mmmm.

    • Oh both awesome ideas.  I'm a wimp when it comes to heat but for those that like it spicy the green chilis would be a great addition.  And it would go wonderful with salsa

  3. All the ingredients my family loves! I will have to try this recipe. It is hard to find stuff they actually like so we seldom add now meals. But this will be perfect. Love Kraft cheese

  5. Oh my goodness, that looks so gooey cheesy good! Mexican and hashbrowns are not two things that usually pair up in my mind,  but I want to give this a shot now.

    I'm a huge fan of this recipe! You've got a bit of everything in there. I might switch out the sour cream for plain yogurt because I always have it on hand. Time for a little fiesta!

    • Hi Brenda, my casserole dish was oval shaped but you want a dish that is around 9 x 13 or 11 x 14 inches would work as well.  Hope that helps!
