It’s no secret that I love my meat and there is nothing I love better than a great steak. Well, actually throw in some lobster and I’m in heaven (check out my steak and lobster fresh rolls). This bite size twist on the classic steak frites is perfect as an appetizer or if you want a lighter meal just serve along side a great salad. The Summer Fresh Aged Cheddar and Chipotle topping gives it a creamy finish with just the perfect amount of bite.
Smoky Lobster & Steak Frites
- One red potato
- 1 tablespoon of olive oil
- Seasoning salt
- One small (4 oz) steak – make sure it’s a tender cut like a tenderloin or a good strip loin
- One lobster tail
- One container of Summer Fresh Aged Cheddar & Chipotle dip
Preheat oven to 425.
Grill or broil your steak to medium. If you prefer your steak a little less done that’s fine but I wouldn’t cook it to more than medium or it will be too chewy. Set aside.
With the skin still on, cut your potato into thin slices. I used a mandoline to get a nice even thin cut. You want to cut them about as thick as a very thick potato chip. Put the potato slices in a bowl and toss with the olive oil and some seasoning salt (you can just use salt and pepper if you prefer).
Transfer to a oiled or lined baking pan and spread out evenly. Bake in the oven for about 15 minutes, turning half way through. You want the potatoes slices to be tender and just starting to brown a bit. A bit crispy around the edges is fine but don’t overcook so they are brittle. Remove from the oven and set aside.
While the potatoes are in the oven cook your lobster tail by submerging in a large pot of boiling water and cooking, at a full boil, for 10 minutes. If you are cooking a frozen tail cook for an addition 5 minutes. Remove from water and let cool.
Remove the shell from the lobster tail and cut the meat into bite sized pieces.
Slice the steak into thin slices.
Put one piece of lobster meat (or more than one if they are small pieces, you want it to mostly cover the potato slice) on each potato slice. Top with a piece of steak. Spoon a dollop of the cheddar and chipotle sauce on each one.
Return to the oven and bake for 5-10 minutes – when the sauce starts to bubble it’s done.
Remove from the oven and serve warm.
