East Meets West in our Prairie Kitchen – Chinese New Year with Blue Dragon

On New Year’s day we were spending the day at home, just relaxing watching a little TV.  One of the shows we were watching was highlighting how different cultures around the world celebrate the new year.  When the Chinese celebrations came on my three year old was fascinated.  The bright colors.  The lanterns.  And especially the dragons!

“Mommy can we go to China?”

“Maybe someday.”

“Can we go tomorrow?”

Well I have to tell you she didn’t like my answer to that one. No is not her favorite word.  And why can’t we just get on the plane tomorrow and fly on over to China?  Flash forward a couple of weeks.  I have the opportunity to try out some awesome Blue Dragon products and incorporate them into my own Chinese New Year’s celebration.  Perfect!

I love to try new things when I cook and the idea of incorporating some Western ideas into some more traditional Eastern dishes really appealed to me.  So I sat down, looked at what I had to work with and created my menu. I really wanted to create a meal what was not only creative and delicious but also wanted to highlight how healthy cooking with an Asian flair can be.

The options were just about endless but I finally narrowed down the choices and came up with the menu:

peanut sauce

Salad Rolls with Thai Peanut Sauce. Not really Chinese but definitely Eastern with a slight Western flair replacing the noodles with just fresh veggies.

Teriyaki Salmon Wellington

I had a lot of fun creating these dishes.  The sauces and other ingredients from Blue Dragon made cooking quick and easy too.  My daughter had a blast decorating for the occasion and of course any chance to bring out the chopsticks puts a smile on her face!

If you haven’t had the chance to try products from Blue Dragon I really urge you to pick some up next time you are at the grocery store.  Whether you are an experienced and confident cook or or just figuring your way around the kitchen, there is something in the Blue Dragon line up for everyone – from quick and easy stir fry sauces to pastes and other ingredients to do more “from scratch” cooking.

We loved all of the items on the menu but I think our absolute favorite (and it was tough to pick) was this yummy and super healthy Quinoa Stir Fry.

Quinoa Stir Fry

Ingredients:

  • 1 cup of quinoa
  • 2 cups of water
  • 1 tablespoon of coconut oil
  • 1 teaspoon of sesame oil
  • 1 cup of broccoli but into bite size pieces
  • 1 cup of snap or sugar peas
  • 1 cup of carrots, diced or cut into strips
  • 1/2 cup of baby corn cobs
  • 1/2 cup of green onions, chopped
  • 1/2 cup of fresh sprouts (optional)
  • 1 jar of Blue Dragon Chow Mein Stir Fry Sauce

Directions:

Rinse the quinoa well in a fine mesh strainer.  Transfer to a medium sized pot and add the water.  Cook on high heat until boiling.  Reduce to low and simmer for 15-20 minutes until tender.  Fluff with a fork and set aside.

In a large skillet or wok heat the coconut and sesame oil over medium high heat.  Add all of the vegetables, except the sprouts.  Stir fry for 3 minutes.  Add the Chow Mein sauce and let simmer over medium low heat for about 10 minutes or until the vegetables are slightly tender (or less if you like them a little crisper).  Stir in the cooked quinoa and cook another 3-4 minutes until heated through.

Top with fresh sprouts, if desired, and serve.
