Simple & Scrumptious Brownie Cookie Recipe

Between parenting a two year old, working full time outside the home and all of the family and other obligations that most of us have, I find that most of my holiday baking is being done “after hours”. Not only is my time limited but since my little one is in bed when I’m working in the kitchen it means noisy appliances have to be kept to a minimum.  So, simple is better.  These brownie cookies are perfect for busy bakers.  It takes me about 10 minutes to mix up the batter.  I then put it in the fridge and bake the cookies the next day.  It really doesn’t get any easier than this.  But don’t let the simplicity fool you.  These cookies are a brownie lover’s dream! And they look awesome!

Chocolate Brownie Cookies

  • 1 ounce unsweetened chocolate – melted
  • 1/2 cup of granulated sugar
  • 2 tablespoons of oil
  • 1 egg
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon of baking powder
  • 1/8 teaspoon of salt
  • 1/2 cup of flour
  • Icing Sugar


Beat sugar, egg, oil and vanilla together in a medium sized bowl.  Beat in the melted chocolate.  You can easily use a hand whisk for this.  Stir in the salt and baking powder.  Gradually stir in the flour until well mixed. Your dough will be very sticky.


Chill for at least 2 hours.


Preheat oven to 350 degrees.  Shape the dough into 1 inch balls and roll in the icing sugar.  Place on lightly greased cookie sheet and bake for 10 to 12 minutes.

  1. I'm assuming since there is not a whole lot of flour in this recipe it would be fairly easy to substitute……

  2. Did i miss something? you wrote "vinager" in the first line, but didn't add that to the recipe ingredients…..

    • LOL do you know how many people have read this post (including me of course) and haven't caught that?  It should be vanilla – I've corrected the post.  Thanks for the catch!
