Candy Nuts Recipe (Sugar Free Option)

Following a relatively sugar free and lower carb lifestyle this simple recipe for making candied nuts is right up my alley. They work equally well with sugar or Splenda or Stevia.  I’ve used cashews in the picture below because I was given a large container of them for Christmas but you can use any nuts you like.  These make a great snack and are also good sprinkled on salads.  Even if you use real sugar they contain far less sugar than the sweet nuts you buy in the store.

Regular or Sugar Free Candy Nuts

Ingredients:

  • 2 to 2 1/2 cups of your favorite nuts
  • 1 egg white
  • 1/2 teaspoon of vanilla
  • 1/2 cup of white sugar or sweetener of your choice (Stevia or Splenda work well)
  • 1 1/2 teaspoon of cinnamon

 Directions:

Preheat oven to 300 degrees.  Line a cookie sheet with tin foil and lightly oil or spray with non stick cooking spray.
Beat the egg white by hand until fluffy.  Beat in the vanilla.  Put nuts in a bowl, pour the egg and vanilla mixture over the nuts and stir to coat.  Add the sugar/Splenda and cinnamon and mix well.
Spread the mixture on the cookie sheet.  Bake for 1/2 hour, stirring half way through.  Remove from oven and while still hot stir again and break any big clusters of nuts apart.  Let cool completely and store in an air tight container.
